
What?? You can use this mix for more than meatballs? Yes, you can and it is so simple!
Ingredients
Thin chicken boneless breasts (or pound them with a mallet to make them thin
OR
1 Eggplant, slice thin (using a mandoline will make this so much easier)
1 package Melly's Homemade Meatball Mix
3 eggs
1/8 cup milk or almond milk
1. Depending on what you are choosing to make for dinner, Chicken Cutlets or Fried Eggplant, the directions are still the same.
2. I don't feel you need to season the chicken or eggplant because our mix is very flavorful!
3. Dip the thin chicken or sliced eggplant in Melly's Homemade Meatball Mix and fry in olive oil, flipping until both sides are golden brown.
4. Eggplant doesn't take as long as chicken to fry so watch they don't burn. If thin, they could take 1 min on each side.
5. Drain on a papertowl
