Artichokes, anyone?


I have been experimenting with Melly's Homemade Meatball Mix and found a super easy way to make stuffed artichokes!


Ingredients:

4 artichokes

1/4 - 1/2 cups water or broth for steaming

1 package Melly's Homemade Meatball Mix


1. Wash artichoke thoroughly and pat dry.

2. Snip the top of the leaves to remove the point. Gently pull the leaves apart so you can stuff them.

3. Fill the leaves with Melly's Homemade Meatball Mix and drizzle olive oil on top.

4. Add liquid to the bottom of an Instapot, add artichokes and cover.

5. Steam artichokes on manual for about 20 minutes or desired tenderness.
